1 Cup Vegetable Oil
3/4 Cups Sugar
3 Eggs
3 Cups Flour
1 Tsp Baking Powder
1/2 Tsp Cinnamon
1 Tsp Vanilla or (1 vile of Greek vanilla powder)
Orange Rind From 1 Orange (this is optional)
1 Cup or More of Chopped Walnuts or Almonds (toast them a little before chopping)

Beat the oil, sugar and eggs for about 3 min. then add the vanilla and orange rind beat another min. Sift the flour, baking powder and cinnamon. Slowly incorporate the dry ingredients into the wet ingredients. Add the nuts. Roll out the logs on the counter using a little flour so they don’t stick. If you want them small it will make 5 logs. If you want them big make three logs. Bake at 350˚ for 30 min. Take them out and cut the logs diagonally and then bake for another 15 min.
