1/2 pound sea scallops
juice of 4 limes
2 Tbs. medium-chopped white or yellow onion
1 tsp. chopped parsley leaves
2 Tbs. chopped green bell pepper
3 Tbs. olive oil
Salt and white pepper to taste

Preparation Method:

Cut the raw scallops into quarters and immerse in a glass bowl of lime juice. Marinate one hour or m ore in the refrigerator. Drain. Combine the remaining ingredients with the scallops and mix thoroughly in glass or china bowl (no metal). As a garnish, you can chop some cilantro leaves if desired, and serve on individual endive leaves, or a bed of lettuce. Garnish with a lime slice. Some people enjoy cocktail sauce on the side with wedges of lemon or lime as well. Enjoy!
