3-4 large chicken breasts or 1 cut up fryer chicken
1 pound thin spaghetti (I use whole wheat) broken into 2 inch pieces
2 cups chicken broth
1 small onion
1/4 cup finely diced green bell pepper
2 cans cream mushroom soup
1 1/2 cups grated cheddar cheese
1 t. seasoned salt, such as Lawrys
Freshly ground black pepper to taste
1/8 t. cayenne pepper to taste, if desired

Preheat oven to 350

1. Cook chicken, cool and tear into bite size pieces. Cook spaghetti - cook it al dente. Drain the spaghetti and set aside.
2. Finely dice the onion. Cue the green pepper into julienne strips and then slice them in the other direction to dice them.
3. Place the cooked spaghetti in a large bowl. Add the cream of mushroom soup. Then add 2 cups of the cheddar cheese. Now add the onion and green pepper, then add the seasoned salt, black pepper and cayenne pepper if you like "the heat."
4. Finally, add the chicken and broth. Stir together well, then taste to check the seasonings and adjust if necessary. Pour the mixture into a large baking pan and top with remaining 1/2 cup cheddar cheese. Take for 35 - 40 minutes, until bubbly.
