3 egg whites
3 tablespoons cold water
1 cup sugar
1 teaspoon vinegar
1 teaspoon vanilla essence
3 teaspoons cornflour/cornstarch

Make well ahead of time – served cool.
Preheat the oven to 150°C (300°F). Using an electric mixer, beat egg whites until stiff (this takes forever!). Add water and beat again. Add sugar very gradually while still beating. Slow beater and add vinegar, vanilla, and cornflour (I always make someone help me by holding the mixer while I add in the stuff – or maybe if you get a new KitchenAid mixer, you won’t have to!) Line an oven tray with baking paper. Pour the pavlova into the center of the tray, keeping it as round and even as possible. Try to keep it about 7-8 inches around. Smooth top surface over. Bake for 45 minutes, then leave to cool in the oven. Decorate with whipped cream (use real whipping cream, not the spray stuff, please).
