2 chicken breasts chopped in cubes
season salt, pepper & garlic salt
1 tsp olive oil
1/2 diced onion
2 cloves of garlic
2 (8oz) cans Hominy (corn kernels) drained
1 (4 oz) can of "El Pato Mexican tomato sauce
1 (4oz) can of tomato sauce
1 32 oz can of red enchilada sauce or if you prefer California Chile powder 1/2 bag.

Directions:
Directions:
In a frying pan cook chicken cubes in olive oil, seasoned to taste, add onions, garlic and saute with chicken. When fully cooked pour all mixture in a stew size pot and add all other ingredients.
Mix well and add 1/2 cup water if mixture is too thick. Cook 30 -40 minutes until steaming hot.
Garnish with:
Sliced avocado, shredded Monterey Jack cheese, chopped cilantro, white or red chopped onions and or lemon-lime wedges.
