1 – 11/2 carton low everything chicken stock

2-3 stalks of celery

1 onion

2-3 packs of pre peeled & chopped butternut squash or one large squash

Directions:

Spray large pot with canola, ( or other non stick), spray

Dice onion & celery, sauté until slightly softened, season with salt & pepper to taste

Add prepared squash, season & sauté with onion & celery for a couple of minutes

Add chicken stock to just cover contents of pot
Bring to a boil then turn down to simmer until veggies are really soft

Let cool then puree with immersion blender, blender or food processor

*Adding 2 peeled diced Yukon gold potatoes with the squash helps give an even creamier texture without adding any cream
