1/2 cup melted butter
1/2 cup white sugar
1 cup packed brown sugar
1/2 teaspoon baking soda
2 teaspoons vanilla
1 teaspoon cinnamon
2 eggs, beaten
1/2 cup oatmeal
1 cup peeled chopped apple
3 cups flaked coconut
1 1/2 cups flour

Directions:
Directions:
Preheat oven to 375º.

Melt butter, add the sugars and stir. Add baking soda, salt, baking powder, vanilla, cinnamon, and eggs. Mix well. Then add apple oatmeal and 1 1/2 cups of coconut, reserve 1/2 cup for top. Add flour and mix well. Grease a 9" X 13" cake pan. Spoon the dough in and pat it out, trust me, it's enough. Sprinkle with the reserved coconut, Bake at 375º for 25 - 30 minutes or until slightly browned on top. Let cool and cut like brownies.
