1 c. milk
2 T. butter
1 T. sugar
2 T. flour
1 15-oz. can of whole kernel corn
2 eggs, beaten

Directions:
Mix everything except corn and eggs in a pot, warming and stirring until mixed and butter is melted. Remove from stove and add eggs, then blend till mixed. Stir in whole kernel corn. Pour into casserole dish and bake 1 hour at 400º.

Be sure to eat with pinto beans! Low fat, about 200 calories a serving, with 7 grams of protein. It takes a while to bake, but easy to fix and so good.
