For Filling:
5-6 Granny Smith Apples
1/2-2/3 cup white or brown sugar
1/8 tsp. salt
1 T to 1 1/2 T cornstarch
1 tsp cinnamon
1 tsp nutmeg

For Pie Crust:
1 1/4 C shortening
1/2 tsp salt
3 C flour
1 egg
5 T water
1 T apple cider vinegar

Preheat oven to 450บ

Peel, core and cut very thin slices of the apples and put in a large bowl. In a separate smaller bowl, mix all the other ingredients together and pour over apples. Stir together. Pour into pie crust. Dot with 1 1/2 T of butter. Place second crust on top and fold edges together. Sprinkle top with white sugar and use a fork to make vent holes in the crust. Bake at 450 degrees for 15 minutes and then reduce to 350 degrees for 45-60 minutes. Crust will be a golden brown.


For Pie Crust:
Mix together shortening, salt and flour in a large bowl. Beat together egg, water and vinegar. Add liquid a little at a time and cut into flour mixture until blended. Makes two 9 inch crusts.
