2 cup flour (not necessary to pre-sift)
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon

2 cup sugar
1 1/2 cups oil (I use canola oil)
4 eggs
2 cups grated carrots (fresh)
8 oz can crushed pineapple (drained)
1 cup chopped walnuts (optional)

Frosting:

Cream 1/2 cup butter with 8 oz cream cheese. Add 1 tsp vanilla and 1 lb Confectioner's sugar. Beat. Add coconut to suit.

Sift first five ingredients together. Add sugar, oil, and eggs and mix. Stir in carrots, pineapple, and walnuts. Place in greased tube pan (do not flour pan). Bake 45 minutes at 350 degrees.
