2 6 ounce salmon fillets
2 tsp. Dijon mustard
2 T. finely chopped fresh chives
2 T. finely chopped fresh parsley

In a 9 inch shallow microwave-safe dish arrange salmon in a single layer. Spread 1 tsp. mustard on top of each fillet then top each with chives and parsley.
Cover salmon loosely with waxed paper and microwave on high (100%) two minutes. Rotate dish and microwave on medium (50%) three minutes. Let salmon stand, covered, two minutes. Check for doneness. If necessary, cook on medium 1 minute longer.

This is flavorful and moist and so easy. It can be easily multiplied for more servings. The original recipe called for salmon steaks, but I prefer the fillet (minus the bones).
