1 lb. fresh mushrooms
1 stick melted butter
1 small onion, minced
1 clove minced garlic
1 c. seasoned breadcrumbs
vegetable/chicken broth or white wine
salt and pepper to taste
freshly grated Parmesan cheese

Directions:
Directions:
Preheat oven to 350 degrees. Briefly rinse the mushrooms under running water, then dry with paper towels. Gently remove stems and set aside, then carefully wipe off the outside of each cap. Place the mushrooms, sides touching and bottom side facing up, in a lightly oiled glass or metal pan.

Take the reserved mushroom stems and trim off the rough end, then chop them up into a small dice. Place a skillet over medium heat and melt the butter. Add minced onions and allow to cook 1 minute, then add the garlic and the chopped mushroom stems. Stir in the seasoned breadcrumbs and season with salt and pepper to taste. If the mixture seems dry, add some broth or white wine to moisten and allow to heat through.
Place a spoonful of this mixture into each mushroom cap and then grate fresh parmesan cheese over the tops. Add about 1/4 inch of broth to the bottom of the pan, then place in the oven for about 15 minutes till they are hot and the cheese is bubbly, then serve.

A delicious appetizer to serve with drinks before dinner. You can stuff a mushroom with anything from lobster to ricotta cheese and fresh herbs, but this simple recipe shows that plain old mushrooms are transformed when you add a little butter and a little heat.
