5-6 cups flour
2 pkgs yeast
1 T salt
2 T sugar
2 cups hot water (120-130)
sesame seeds

Directions:

Sprinkle baking sheet with cornmeal. Place 4 cups flour in large bowl, add yeast, salt and sugar. Stir until well blended. Pour in hot water and beat for 3 minutes. Gradually work in remaining flour 1/2 cup at a time, using fingers if necessary, until dough is not sticky. Knead on floured surface for 6 minutes. Place dough in bowl cover with plastic wrap, raise until double, about 15 minutes. Punch down. Shape into 2 rounds. Place on baking sheet. Slash X on top with sharp knife. Brush with water and sesame seeds. Place in middle of cold oven. Place hot water below and heat oven to 400º, Bake 25-40 minutes. Thump on bottom of crust to test doneness, should sound hard and hollow.
