1 whole tenderloin (about 5 lbs - silver skin removed)
olive oil
Salt and Pepper
1/2 C.dry white wine

For sauce:
1/2 C. butter melted
1/2 C. grated onions (finely chopped)
2 tsp. Dijon mustard
1 tsp. Worchestershire sauce
1/2 C. Cognac

Directions:
Directions:
Combine ingredients for sauce, heat gently and sit aside. Season beef with olive oil, salt and pepper. Roast at 400º for 30 min to 1 hour. Baste with white wine the last 10 minutes. Place meat on large platter. Pour sauce in roaster with meat juices over roast and carve. Serve some sauce with each serving.
