6 tbsp butter or 1/4 c oil
1 cup white sugar
2 eggs
1 tsp cinnamon
1 tsp vanilla
1 cup all purpose flour
1 tsp baking soda
pinch salt
2 cups diced apples ( about 2 large apples)
zest of one orange
1/2 cup raisins ( optional)

Directions:
Directions:
Preheat oven to 350º. Grease a 9 x9 square cake pan. In a medium bowl, beat butter and sugar. ADd eggs and beat until light. Add cinnamon and vanilla. In a small bowl, combine flour, baking soda and salt. Fold into first mixture, just until combined. Add diced apples, peel and raisins. Bake for 35-40 minutes or until top springs back when touched lightly.Sprinkle with icing sugar and cool.
