½ pound loaf French bread
1 tsp. vanilla
3 eggs
¼ tsp. cinnamon
1 ¾ cup milk
¼ tsp. nutmeg
¾ cup sugar
1/8 tsp. salt
½ cup half n’ half
¼ cup raisins, optional
Berry Sauce:
2 1/2 Tablespoons cornstarch
¾ cup water
¼ cup sugar
¼ cup cognac
1 (12 oz.) pkg. unsweetened frozen berry medley, thawed.*

Cut bread cubes into 1 inch cubes & spread in a pan; loosely cover and let stand overnight to dry. Beat remaining ingredients. Spray 8x8 baking dish with cooking spray and add dry bread cubes. Pour milk mixture over bread cubes. Cover dish with aluminum foil. Bake at 325 degrees for one hour – longer if necessary – test with knife in center.

Combine cornstarch and sugar in saucepan. Stir in water and cognac. Cook, stirring continuously, until thick and clear. Remove from heat and stir in fruit. Cover and chill. Serve warm over warm bread pudding. A dollop of Cool Whip is good, too.
*If substituting sweetened frozen raspberries or strawberries in juice, include juice when adding fruit and use only 2 Tbsp. of sugar.
