1/2 Cup margarine
1 1/2 cups brown sugar
2 eggs
1 cup canned pumpkin
1 tsp vanilla
1 tsp grated lemon peel or juice
2 1/2 cups flour
3 tsp baking powder
1 tsp salt
1 1/2 tsp pumpkin pie spice
1/4 tsp ginger
1 cup chopped walnuts

Directions:
Directions:
Cream butter and sugar together until fluffy, beat in eggs and stir in pumpkin, vanilla and lemon. Resift flour with baking powder, salt and spices, blend into butter mixture, stir in walnuts. Drop by tablespoon onto greased baking sheet. Bake 350º. To decorate: Spread cooled cookie with vanilla butttercream frosting and sprinkle with chopped walnuts.
