15 lbs Deer Meat:2 1/2 Tbsp. black pepper,
1 1/4 tsp. mace,
1 1/2 tsp dried mustard,
1 tsp accent,
1 tbsp seasoned salt,
1/4 tsp garlic powder,
1/2 cup brown sugar,
3/4 cup Tenderquick (Randy uses about 1/2 cup)
1/2 ounce Liquid Smoke
1 tbsp corriander

Mix all ingredients well. Chill 24 hours. Bake 4 hours at 225º (Hang on oven rack by cotton strings to bake) Makes 15 lbs.
