3 c. grated raw zucchini
3 c. sugar
1 1/2 c. oil
4 eggs
4 c. flour
2 tsp. baking powder
1 1/2 tsp. salt
1/2 c. ground nuts
1 tsp. baking soda
1 + c. crushed pineapple, drained
1 tsp. vanilla
1 tsp. coconut flavoring
1 tsp. rum flavoring (or) 1 - 2 Tbsp. spiced rum liquor

Directions:

Mix first four ingredients and beat two minutes. Sift flour, baking powder, salt and soda. Mix dry ingredients, then add remaining ingredients.

Bake in greased and floured loaf pans at 350º for 55 minutes.

Makes 3 loaves.
