3 Pheasants or chicken, split (I use breasts)
1/2 C butter
2 C sliced mushrooms
1 C dry white wine
2 Tbsp. lemon juice
1/2 C chopped onions
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
Saute pheasants or chicken in butter 10 minutes. Remove from skillet and saute mushrooms in butter remaining in skillet 10 minutes. Return pheasant or chicken to skillet. Add wine, lemon juice, onions, salt and pepper. Cover and skillet 1 hour or until tender.
