6 short ribs, 10 oz. each
Salt to taste
Pepper to taste
Flour as needed
2 oz. bacon fat
1 qt. chicken stock
1 oz. soy sauce
1 oz. Worcestershire sauce
1 oz. brown sugar
2 oz. white sugar
2 oz. red wine vinegar
2 oz. ketchup
6 oz. pineapple juice
1/8 tsp. ginger
2 oz. cornstarch
Stock, as needed
1 oz. bacon fat
1 oz onion, finely chopped
1 oz. red pepper, finely chopped
1 oz. green pepper, finely chopped
2 oz. pineapple, fresh, cut into cubes

Directions:
Directions:
Sprinkle short ribs with salt and pepper. Dredge with flour. Brown in bacon fat. Place in brazier pan.
Combine chicken stock, soy sauce, Worcestershire sauce, brown and white sugar, vinegar, ketchup, pineapple juice and ginger; pour over ribs. Heat to boil; simmer, covered, 2 hours, turning occasionally. Combine cornstarch and stock. Add to sauce; thicken.
Stir-fry bacon fat, onion, red and green peppers for 2 minutes.
Add pineapple; cook 2 minutes. Add to meat; simmer for 30 minutes or until tender.
Taste and adjust seasonings.
Serve with whipped potatoes and zucchini bread.
