6 ounce box Uncle Ben's long grain and wild rice
1 cup celery slices
2 cups cubed ham, turkey, chicken, or shrimp
1/2 can black olives sliced
3/4 cup green pepper strips
1/2 cup carrot slices
3/4 cup mayonnaise
1 teaspoon onion salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper

Directions:
Cook rice according to directions on box. Chill. Mix mayonnaise and seasonings together. Add to rice along with all other ingredients, mixing gently until well incorporated. Cover and chill until serving time. Serve on lettuce leaves and garnish with cherry tomato roses, carrot curls, parsley sprigs or what have you, if desired.

I have made this for parties in the past, using a ring mold and garnishing with cherry tomato halves on a bed of curly lettuce to resemble a Christmas wreath. Also gorgeous using a scallop shell mold (Wilton has a pretty one) with the shrimp variation. Serve on lettuce bed with slices of lemon for an impressive presentation. Green grape halves can be added if using the chicken meat variation. Pineapple tidbits go great with ham. Craisins with turkey. The possibilities are endless! Get creative and experiment!
