Ingredients: CAKE:: 1 dark chocolate cake mix FILLING: 4 oz cream cheese, softened 1/3 cup sour cream 1/3 cup sugar 1 egg 1 tsp vanilla extract 2/3 cup mini semi sweet chocolate chips FROSTING: 1/2 cup butter 1/2 cup sour cream 1 cup Hershey's Dark Chocolate Cocoa Powder 1 tsp espresso powder 1 tsp vanilla extract pinch of salt ( do not need if using salted butter) 2 cups powdered sugar

Directions:Cream butter and sour cream together. Add vanilla extract. Add chocolate and espresso. Beat in desired amount of powdered sugar until frosting reaches desired consistency. Pre heat oven to 350 degrees. Line cupcake pap with paper or foil liners. Spoon about 1 rounded tablespoon cake mix in each cupcake liner. Next, add about 2 teaspoons filling in center of each cupcake. Top with remaining cake mix, a little at a time until evenly distributed and used up. Bake 20 minutes. Cool completely.
Pipe sour cream chocolate frosting over cooled cupcakes, If desired decorate with chocolate curls. For chocolate curls use vegetable peeler and shave Hershey's Milk Chocolate bars. ( Usually takes 2 to make enough curls). Sprinkle on iced cupcakes. Refrigerate until frosting is firm. Best served at room temperature. |
