2 lb. Ox-Tail Pieces
1/4 cup barley
3 large carrots - cut into pieces
3 stalks celery - cut into pieces
Cooking Onions - sliced
1 Bay Leaf
2 tsp. salt
1/2 tsp. pepper
Other herbs & spices to taste, eg. basil, sage, garlic, all spice, etc.

Directions:
Directions:
Slowly cook the meat until tender. Discard the bones, bay leaf and other solids.
Other options:
1. Sherry or Wine to Taste
2. Lemon Juice
3. Tomatoes (stewed or canned)

Sauce - Served Separately
1/2 cup whipped cream
1/2 cup cream
Sherry to taste
1 tsp. curry powder

Recommended with the soup:
Sherry - 1/2 sweet and 1/2 dry
Pumpernickel bread with butter
