2 Tbsp Olive Oil
4 Garlic Cloves, minced
1/2 Tsp Hot Red Pepper Flakes
28 oz can Crushed Italian Tomatoes
1 Tsp Salt
1/2 Tsp Freshly Ground Pepper
1/4 Cup Chopped Fresh Parsley
1 Lb Penne Noodles
1/2 Cup Freshly Grated Parmesan Cheese

In a large heavy frying pan, heat oil, add garlic and pepper flakes. Do not brown. Stir in tomatoes, salt and pepper. Cook for 10-15 min, or until thickened. Stir in half of the parsley. Set aside. In a large pot of boiling, salted water, Cook penne for 10-15 min. Drain well. Reheat sauce and pour over penne. Sprinkle with parmesan and remaining parsley. Toss well. Serve in individual pasta bowls.
