10 oz pkg. Frozen Kernel Corn
1 Large Peeled Potato, chopped
1 Medium Onion, chopped
1 Small Red or Orange Pepper, chopped
10 oz can Chicken Broth
6 oz can Evaporated Skim Milk
1/4 Cup Apple Juice
1/2 Tsp Cumin
Salt and Pepper to taste
Fresh Cilantro Leaves (optional)

Directions:

Combine all ingredients in a large saucepan. Bring to a boil; reduce heat and simmer, covered, for 10 min, until potato is tender. Put 2 cups of the chowder into a blender and puree until smooth. Return to saucepan, cook and stir until heated through.
