1 Cup Carrot, well cook and mashed
3/4 Cup Sugar
2 Tsp Baking Powder
2 Cups Flour
2 Tsp Vanilla
3/4 Cup Coconut
3/4 Cup Shortening
Directions:
Directions:
Bake 10 minutes at 350ºF. Ice with icing sugar. If you have a small ice cream scoop, this will make them all the same size.
