1 cup sugar
2 T flour
2 1/2 tsp salt
1 3/4 cups pineapple juice
2 eggs beaten
1 T lemon juice
3 quarts water
1 T cooking oil
1 package (16 oz) ancini de pepe
3 cans (11oz) mandarin oranges
2 cans pineapple chunks or tidbits (20 oz)
1 can (20 oz) crushed pineapple
1 9 oz cool whip

Drain pineapple reserving the juice for the sauce

Drain oranges. Combine pineapple and oranges in strainer set over large bowl. Cover with plastic wrap and set aside to drain in refrigerator for several hours.

Bring water, 2 tsp salt and oil to boil Add ancini de pepe. Cook at rolling boil until done (check package for times). Drain. Rinse with water set aside to cool in large bowl.

Combine sugar, flour and 1/2 tsp salt. Gradually stir in pineapple juice from drained fruit above and eggs. Cook over medium heat, stirring, until thickened. Add lemon juice. Cool.

Stir Add to ancini de pepe into thickened fruit sauce. Refrigerate several hours or overnight.

Add pineapple and oranges and cool whip. Stir together lightly but well. Serve.
