1 lb Jimmy Dean sausage (I use either sage or maple flavored)
large onion, diced
large red bell pepper, diced
about 1 teaspoon dry rubbed sage (or 1 Tbsp or more fresh sage, minced)
about 8 -10 large sweet potatoes, peeled and cut in medium sized chunks (enough to fit in 9x13 pan)
salt and pepper
about 1/4 cup maple syrup

1. Preheat oven to 350 degrees.
2. In a large frying pan, cook sausage, onions, red pepper, and sage until sausage is cooked through. Do not drain.
3. In a lightly greased 9x13 baking dish, combine sweet potatoes and sausage mixture. Season generously with salt and pepper and stir. Spread evenly in pan. Drizzle maple syrup over top of potatoes.
4. Bake covered for about 45 minutes. Uncover, stir, and continue to bake uncovered until sweet potatoes are cooked through, about 15-30 minutes. Cooking time will depend on size of sweet potatoes chunks.

This dish has become a Thanksgiving favorite. It can be made a day ahead of time, refrigerated, and reheated to serve. But don't limit it to Thanksgiving, I make it whenever I can get red peppers for a reasonable price.

To fancy it up, before serving add dollops of goat cheese to the dish.
