2 Tablespoons olive oil
1 clove garlic, chopped
2 lbs 85% or 90% lean hamburger
12 slices of American cheese, stacked then cubed
1 heaping cup homemade bread crumbs
1 egg, beaten
1/2 cup grated Romano or Parmesan cheese
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder, or1 clove garlic, minced

Heat olive oil in large skillet. Saute 1 clove chopped garlic slowly. In a large bowl, mix hamburger with breadcrumbs, seasonings, egg and Parmesan cheese. Add the hamburger mixture to the skillet with the olive oil. Brown mixture slowly. When almost completely browned, drain slightly, and add cubed American cheese until evenly distributed and starting to melt. Stuff mixture into turkey or chicken cavity. Bake, in the bird until the bird is done.

Mom used to make this at Thanksgiving, stuffing the large cavity of the turkey with traditional herb stuffing and the other cavity with this Italian Stuffing. It basically tastes like a big meatball! Delicious!
