1 c sugar
1/3 c cornstarch
1/8 tsp salt
1 1/2 c water, divided
3 eggs separated
1 tsp grated lemon rind
1/4 c plus 2 tbsp lemon juice

Meringue

1/4 c plus 2 tbsp sugar
1 tsp lemon juice
egg whites

Directions:
Directions:
Combine 1 cup sugar, cornstarch,salt and 1/4 cup water in a 1 1/2 quart microwave safe bowl. Mix well. Stir in remaining water. Microwave at High for 6 minutes or until thickened and clear. Stirring at two min intervals. Beat egg yolks until thick and lemon colored. Gradually stir about 1/4 of hot mixture into yolks. Add to remaining hot mixture. Microwave at High for 1 min. Stir in lemon rind and 1/4 cup lemon juice. Cool slightly and pour into pie shell. Beat egg whites (at room temp) and 1 tsp lemon juice at high speed for 1 min .Gradually add 1/4 cup plus 2 tbsp sugar until stiff peaks form. Spread on pie. Bake about 10 min until brown.
