1 whole 12" pork loin
1 can maraschino cherries, crushed
1 can pineapple, drained & crushed
Brown sugar
Cloves

Directions:
Directions:
Slice pork loin lengthwise not the whole way through; then, slice each half lengthwise again, also not the whole way through. You should have a quartered pork loin with the quarters all connected.

Stretch out the loin roast. Spread crushed maraschino cherries & pineapple onto the roast. Sprinkle the entire roast with brown sugar and cloves.

Roll the roast back together lengthwise. Tie it together as needed.

Cook in a smoker for 4 hours to an internal temperature of 160º.

I love the taste of a Christmas ham--with brown sugar and cloves or pineapple and cherries. I wanted to create a taste you could have during the year that wasn't so much meat, but had all those flavors wrapped in.
