1 tbsp. olive oil
2 skinless, boneless chicken breast halves
1/2 sweet onion
3 cloves garlic
7 oz. of yams, drained
15.5 oz. garbanzo beans
1 large carrot
14.5 oz. canned diced tomatoes with juice
14 oz. chicken broth
1 tbsp. sugar
1 tbsp. lemon juice
1 tsp. lemon juice
1 tsp. salt
1 tsp. ground coriander
1/2 tsp. cayenne pepper

Cut the chicken into chunks, chop the onion, and mince the garlic. Heat the olive oil in a large skillet over medium heat and cook the chicken, onion, and garlic until browned (about 15 min.). Mix the yams, beans, carrots (chopped), tomatoes with juice, broth, sugar, lemon juice into the salt, coriander, and cayenne pepper. Bring the mixture to a boil and cook for 30 min., or until the vegetables are tender. Serve with white rice.
