4 bay leaves
1 tsp salt
1 tsp white pepper
1 tsp dry mustard
1 tsp ground red pepper (cayenne)
1/2 tsp ground cumin
1/2 tsp dried thyme
4 T margarine
1 1/2 cups smoked ham, diced, cooked
1 1/2 cups spicy sausage, diced, ( andouille, Italian or Polish)
1 1/2 cups onions, chopped
1 1/2 cups celery, chopped
1 cup green pepper, chopped
1 1/2 tsp minced garlic
2 cups rice, uncooked
4 cups chicken broth

Directions:
Directions:
Combine first 7 ingredients in a small bowl and set aside. In a heavy dutch oven melt margarine; and ham and sausage, cook 5 minutes, stirring occasionally. Add onions, celery,green peppers, seasoning mix and garlic. Stir and continue cooking until browned, 10 to 12 minutes, scraping bottom of pan well. Stir in chicken broth and rice. Bring to a boil, reduce heat and simmer until rice is tender but still crunchy, about 20 minutes, stirring occasionally.
Notes: Original recipe calls for light gumbo file powder with spices but it is hard to find. As a variation use 8-16 oz deveined, shelled and cooked shrimp added last 10 minutes. This recipe is quite spicy (NOT). If a milder version is desired, cut red pepper back to 1/2 tsp.

Needless to say I increase all the spices and add red pepper flakes and of course lots of pepper - Hot Shot if you have it.
