3-1/2 lb medium potatoes (10)
1 cup chopped onion
1/2 lb bacon diced (I use 1 lb)
2 Tbsp flour
1/4 cup sugar
2 Tbsp butter
1 1/2 tsp salt
1/4 tsp pepper
1/2 cup cider vinegar
1 cup dairy sour cream
chopped parsley
1/2 tsp celery seed (Saute with onion in bacon fat) (celery seed is optional, I use it 'cause I like it!)

Cook potatoes, covered, in salted boiling water to cover 35-40 min., until fork-tender. Peel warm potatoes, slice, add onion. In large skillet, cook bacon, remove from heat.pour off fat, return 1/4 cup to skillet. Stir flour into fat in skillet. Add sugar, butter, salt, pepper, vinegar, 1 cup of water. Bring to a boil stirring. remove from heat, add sour cream. Add potatoes, onion, bacon, toss gently. Sprinkle with parsley. serve warm.

I saute the onion into the bacon fat. I also use 1 & 1/2 times the "sauce" recipe part 'cause we love the flavor so much. You choose. By using more, it tends to make the potatoes a bit mushy when heating up the next day, but it tastes sooo good and even better the next day. A tradition in our family!
