1/2 cup assorted olive slices (Greek olives)
3 sprigs fresh thyme
3 Tbsp extra-virgin olive oil
1/2 tsp grated lemon zest (or skin of a lemon)
4 to 5 ounce log goat cheese

Directions:
Directions:
Heat olives, thyme, oil, zest and 1/4 tsp pepper in a small skillet over low heat until fragrant (do not simmer). Cool to room temp. Spread goat cheese onto a platter & then spread olive mixture over goat cheese. Serve with flatbread.

Had this at our Greek "Lawn Dinner" and was gone lickety split! Even Jeff didn't want goat cheese and then was the one who liked it the most!
