1 partially baked pie crust
4 eggs
2 cups sliced portabello mushrooms
1 cup sliced onion
1 1/2 cups of gruyere Cheese
1 1/2 cups of sour cream
1/6 cup butter
2 tbsp. of mustard
salt and pepper to taste

Directions:
Directions:
Melt butter in saucepan over medium heat. Add mushrooms and onion and saute. Add salt and continue to saute until fully cooked. Drain any melted butter from mixture.
Whisk eggs together. Add sour cream. Mix in 1 cup of the gruyere. Add cooked mushroom and onions and stir together. Add pepper to taste.
Place mustard on pie crust and spread to cover the bottom. Pour mixture into pie crust. Top with the rest of the gruyere. Bake at 350º F for 40 minutes, or until the quiche is golden brown.
Take out of oven and cool. Serve warm or chilled.
