- 1 lb. Italian sausages or sausage meat (sweet)
- 1 1/2 cups Mozzarella cheese (Asiago or suitable alternative can also be substituted)
- 1 tbsp. Parmigiana cheese
- 3 eggs
- 1/4 tsp. oregano
- 1/4 tsp. basil (dried)
- 1 lb. dough (fresh or frozen)

- If using frozen dough, let defrost for 2 1/2 hrs.
- If using whole sausages, remove from casings.
- Brown sausages in lightly greased frying pan, roughly 5 minutes or until no pink remains.
- Drain grease from sausages and place in suitably sized bowl.
- Let browned sausage meat completely cool.
- Beat 2 eggs and add to sausage meat.
- Add seasonings and mozzarella cheese to bowl with sausage meat and eggs. Mix with hands.
- Roll out dough on lightly floured board into 10x14" rectangle.
- Spoon sausage mixture evenly to within 1/2" of edge.
- Place on cookie sheet and form into either a ring shape, or a roll (similar to a jelly roll). Pinch the edges and ends together to seal.
- Make small slashes 1/2" deep every 1-2" along length of loaf.
- Beat 1 remaining egg and brush over the loaf.
- Sprinkle Parmigiana cheese along the top.
- Cover and let rise until loaf roughly doubles in size.
- Preheat oven to 350F.
- Bake for 30 minutes.
- Remove from oven and let cool.
- Slice into 1" slices and serve warm or cool.

I vividly remember the flavor of this dish. It was usually prepared for special family gatherings, but I used to nibble on it for days afterward. Best if served at room temperature or slightly warm.
