3 tbsp garlic
1 large onion, diced
1 lb shrimp
1 lb fresh green beans (sliced very thin, on a diagonal)
3 carrots (cut very thin)
1 bok choy
3 stalks of celery (cut very thin)
green onions
1/4 cup soy sauce
1 quart chicken broth
rice noodles

Directions:
Directions:
Saute shrimp, garlic, and onions. Add green beans, the white stalk of the bok choy, celery, and carrots. Season to taste with black pepper and soy sauce. cook until carrots are slightly tender. Add green onions and the leaves of the bok choy. Set this mixture aside.

Soak rice noodles in cold water for about 5 minutes. (watch them, you don't want them mushy)

In a large pan add approximately 1 cup chicken broth, a little soy sauce, accent, and black pepper. Bring this to a simmer then add the (soaked and drained) rice noodles. Cook til noodles are soft. You really have to taste these as you're cooking them to get the right amount of seasoning.

This recipe can be a little tricky. Practice makes perfect. We serve it with fresh lemon wedges and of course, more soy sauce to season it with. I have substituted fresh vegetables with frozen vegetables, it works, but obviously not as good.
