Ingredients: CAKE: 1 box butter cake mix 1 package (not instant) vanilla pudding 4 eggs 1/2 cup light rum 1/2 cup cooking oil 1/2 cup water 1/2 cup finely chopped pecan
RUM GLAZE: 1 stick butter 1 cup sugar 1/4 cup light rum 1/4 cup water

Directions:CAKE: Preheat oven to 325 degrees. Grease and flour bundt pan. In bottom of pan, sprinkle 1/2 cup finely chopped pecans. Mix ingredients together and pour into pan. Bake about one hour. Remove from oven and while still hot, drizzle rum glaze over it. Leave cake in pan for at least 30 minutes so the glaze can soak through. RUM GLAZE: Blend all ingredients, bring to a boil and boil for 2 to 3 minutes. |

Notes: I got this recipe from a family friend many years ago. She used to bring us one for Christmas every year and we anxiously awaited it's arrival. When I finally got her to give me the recipe, I was delighted to be able to make it myself. This is the perfect cake to take to someone one special during the holiday season; it's also good made in miniature size bundt pans.
