1 c sugar
1/2 c shortening (I use butter)
1 egg
2 c Finely chopped apples,no need to peel apples
1/2 c cold coffee
1 1/2 c flour
1 tsp. soda
1/4 tsp. salt
1/4 c cut chopped walnuts
vanilla - optional.

Mix together separately for Topping -
1/4 c chopped nutmeats
1/4 c brown sugar
1/4 c white sugar
2 Tablespoons butter
1 Tablespoon. flour
1 tsp.. cinnamon

Directions:

Cream shortening, sugar & eggs. Add apples. Add coffee alternately with dry ingredients. Mix in nuts. Spread in ungreased 8 x 12 pan. Sprinkle topping evenly over batter. Bake at 375º for 30 minutes. Test for doneness, OK to be a bit soft in center. Best served warm with whipped cream or ice cream.... Good cold also....

Can use more nuts, and put a bit of cinnamon in cake batter. I usually double recipe and bake in a regular 9 x 13 pan...
