2 c sugar
3/4 c applesauce
3/4 c vegetable oil
4 eggs
2 c flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 Tbsp vanilla
3 c grated carrots
1 c chopped nuts (optional)

icing:
1 box powdered sugar
1/2 c butter
8 oz softened cream cheese
1 tsp vanilla

Directions:
Directions:
Cream together sugar, applesauce, oil, and eggs. Sift flour, soda, cinnamon and salt together. Add to creamed mixture. Add carrots, nuts and vanilla to batter. Hand mix. Bake in 9x12 pan at 325 for 1 hour
