2 cups pumpkin pulp (canned)
2 tbsp. butter/margarine
1 pr. milk
1/4 tsp. nutmeg
1/2 tsp. mace
1/2 tsp. cinnamon
1 tsp.ginger
1 cup sugar
1/2 tsp. salt
3 eggs

Directions:
Directions:
Mix spices with a little sugar to break up lumps. Add to pumpkin. Mix a little sugar with egg yolks; add to pumpkin. Add balance of sugar. Mix well. Heat milk (scald). Beat egg whites with salt until fairly stiff. Add heated milk to pumpkin mixture, then add egg whites and mix. Pour into uncooked pie shell. Bake at 400ºF for about 15 minutes, then at 300ºF for 30 minutes. Makes 2 regular size pies.
If a large can of pumpkin is used, add about an extra 1/2 of all ingredients. This will make 2 large pies or 3 regular. A topping of nutmeg flavored whip cream with pecans sprinkled on top is nice.
