Olive Oil 1/4 cup
Water 2 gallons
Salt #10 (beige) scoop

Pasta 5#

Directions:
Directions:

Add water, salt and olive oil to
the steam kettle.
Bring water to a boil.
柊dd pasta to the boiling water.
Stir with the wire skimmer to
keep pasta from sticking.
Bring the mixture to a boil,
stirring every 2-3 minutes.
Cook for 8-10 minutes until pasta
is cooked to an al dente stage
Add ice and water to a large
lexan for the cooling process.
Using a perforated lexan or
colander, drain pasta from the
boiling water.
柊dd the pasta to the ice and
water.
百tir pasta with a wire skimmer
until completely cold.
疋rain pasta using the
perforated lexan or colander.
Be sure to remove any ice that
has not melted.
柊dd olive oil and mix to
thoroughly coat pasta (this
prevents the pasta from
sticking together).
Place pasta into a small clear
lexan.
Cover, label, date and
refrigerate.
