1 pie shell at room temperature
1 cup brown sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. mace or nutmeg
1/2 tsp. ginger
2 eggs beaten
11/2 cups of pumpkin (not pumpkin pie filling)
1/2 cup milk
1/2 cup cream

Preheat oven to 450º

Line 9" pie pan with room temperature shell then put in fridge, (or freezer for 10 minutes), so it is well chilled before adding filling

Mix all ingredients together until really well blended.

Pour into pie shell. Place pie on rack in bottom third of oven to help prevent a soggy crust

Bake in 450º oven 20 minutes and reduce temperature to 350º and bake 25 minutes longer
