1 tablespoon olive oil
1 small onion, chopped
1 teaspoon coriander seeds, crushed
1 pound carrots, sliced
3 cups vegetable stock
1 bunch fresh cilantro, chopped, plus more for garnish

Directions:
Directions:
Cook onion and coriander until brown, add carrots and cook, covered, 20 minutes, stirring occasionally.

In a separate pot, bring stock to a boil. Add onion-carrot mixture and bring back up to a boil. Season with sea salt and cilantro.
