2 cups canned tomato sauce
1/2 tsp ground cumin
1 tsp cayenne pepper
1 tsp white vinegar
1/4 tsp granulated garlic
6 fresh corn tortillas cut in 1/2 inch strips
3 cups sliced zucchini
1 cup fresh or canned corn
4 oz can diced green chilies
3/4 cup grated cheedar
3/4 cup sour cream
thinly sliced green onions for garnish

Directions:
Directions:
Combine tomato sauce, cumin, pepper, vinegar and garlic and simmer over low heat.

Slice six fresh corn tortilla in 1/2 inch strips. Fry in very hot oil and drain.

Steam 3 cups of fresh zucchini until tender, drain.

In a separate dish, combine the zucchini, corn, chilies, cheddar cheese, and fried tortillas.
Spoon mixture into a well oiled 9X12 inch baking dish and spread.
Serve with onions and sour cream on top

This is a recipe that Mike and Paulette got from their favorite restaurant while living in TX. They have made this great dish for us several times. Always a crowd pleaser. The best part of this is when they fry the tortillas, Nothing like hot, crisp chips :)
