3 cups of warm water,
11/2 tab yeast,
11/2 tab kosher salt,
61/2 cups flour

Directions:
mix water and yeast, add flour, cover bowl with damp towel, let rise 2 hours, put in fridge for overnight, sprinkle flour on the top of bread dough, take out grapefruit size ball, stretch around bottom 4 times or until smooth, let rest 20 minutes on cookie sheet that was lined with parchment paper or corn meal, preheat oven to 450 for 20 minutes, put broiler pan in bottom of oven, flour tops of bread loafs, cut slits on top of bread, place bread in oven and put 1 cup hot water in broiler pan, close oven door quickly, bake for 30 minutes

bread comes out of oven crunchy on the outside, soft in the middle , let it rest for a couple of minutes before cutting
