4 cups pumpkin
1 1/2 cups sugar
1/4 cup flour
1/2 tsp salt
1 Tbsp pumpkin pie spice
2 (3.5 oz) boxes of instant vanilla pudding

6 egg yolks (reserve egg whites for later)
1 (12 oz) can evaporated milk
1 (14 oz) can sweetened condensed milk

6 reserved egg whites

2 pre-made deep dish pie crusts

Directions:

Mix together the first 6 ingredients.

In a separate bowl mix together the next 3 ingredients and add to first mixture.

Beat the 6 reserved egg whites until almost stiff and add to the mixture. Mix altogether. Pour into pie crusts. I buy pre-made deep dish pie crusts.

Bake at 350 degrees and watch close after 45 minutes.
