1/2 cup packed dark brown sugar
1/4 cup sugar
1 stick butter, softened
1 large egg
1 tsp vanilla extract
3/4 cup unbleached flour
1/4 tsp salt
1/2 tsp baking soda
1 1/2 cups old-fashioned rolled oats
1/2 tsp ground coriander
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/8 tsp ground mace, optional
1/2 cup chopped pecans, lightly toasted
1/4 cup dried apricots, diced
1/4 cup dried cranberries

Preheat oven to 350 degrees.

Mix the butter and both sugars together well with an electric mixer. Add the eggs and vanilla and mix together well.

In a small bowl mix together the flour, salt, baking powder, and spices if using any.

Add the flour mixture to the wet mixture in parts, mixing well after each addition.

Mix whatever additions you’re using (in this case cranberries, apricots, and pecans) together in the bowl used to hold the flour.

Add the oatmeal and stir-ins mixture alternately, a bit at a time, mixing well between additions.

Measure out walnut sized balls of dough and place on ungreased cookie sheets, flatten them slightly with your hands.

Bake for 6 minutes and then flip cookie sheets front to back and top to bottom (if baking 2 at once).

Bake another 6 minutes. Let cool for a couple minutes then remove to a rack to finish cooling.

Keep dough in fridge between batches. You can refrigerate the dough for up to 3 days.

Don't feel like cranberries, apricots, or pecans?

You can substitute up to 1 cup of almost anything for them. Depending on what you stir in, you can leave the spices in, adjust them, or take them out entirely. But please use the vanilla extract no matter what.

M&M's®, white chocolate chips, and cranberries
White chocolate chips and Macadamia nuts or pecans
Butterscotch chips and Heath® or Skor® toffee chips
Cinnamon chips and raisins
Cranberries and raisins
Chocolate chips and raisins
Chocolate chips and salted peanuts
Chocolate chips or M&M’s®, salted peanuts, and raisins (trail mix)
Diced apricots and candied orange peel.
